02 - Whisk together tahini, lemon juice, olive oil, minced garlic, water, salt, and pepper in a small bowl until smooth and creamy. Add additional water 1 teaspoon at a time if dressing is too thick.
03 - Divide the cooked rice evenly among four serving bowls as the base layer.
04 - Arrange cherry tomatoes, cucumber, bell pepper, red onion, and spinach in sections around the rice in each bowl.
05 - Scatter chickpeas, olives, and crumbled feta cheese over the vegetables. Add a generous dollop of hummus to each bowl.
06 - Drizzle lemon-tahini dressing over each bowl. Garnish with chopped fresh parsley and serve with lemon wedges on the side.

# Expert Advice:

01 -
  • Everything can be prepped ahead so you can assemble dinner in under five minutes on busy nights
  • The combination of warm rice and cool crisp vegetables creates the most satisfying texture contrast
  • That lemon-tahini dressing will become your new favorite on everything from salads to roasted vegetables
02 -
  • The dressing thickens as it sits, so always give it a good whisk and add another splash of water before serving
  • Room temperature rice works better than piping hot, which can wilt the vegetables too much
03 -
  • Cut all your vegetables into similar-sized pieces so every forkful has a little bit of everything
  • Warming the hummus for 30 seconds in the microwave makes it extra velvety and easier to spread
